The Brodetto of Ancona

 

In a large earthenware pan, fry with the best extra-virgin olive oil onion and a clove of garlic slowly. Add ½ glass of white wine vinegar, parsley and tomato sauce. Pay attention to the different cooking time of these fishes. Types of fishe to be used: cuttlefishes, mantis shrimps, piper gurnard, redfish, rays, monkfish, dogfish, goatfishes, shellfish.
