Amandola - White Truffle Festival in Amandola

 
"Diamonds on the table" so it is called the White Truffle Festival in Amandola, a typical product of the Sibillini Mountains, which has enlivened the historical centre, during the months of October and November, for nearly two decades; with rich food stands plenty of smelling truffle and traditional dishes , without forgetting cakes, mulled wine and chestnuts.
But the real peculiarity of the White Truffle Festival in Amandola, is that the same truffle hunters of this place show and sell their truffles, after passing with their dogs through the woods in the Mountains of the Sibillini National Park . Those light brown, with white stripes, are the most valuable and prized ones for their flavor: this is the white truffle that can be served with pasta, rice, or on fried eggs. However the natural 'culinary vocation' of the white truffle is to give flavor to a homemade pasta dish.
