The selection of grapes is entrusted to the experience indicating the particles of the vineyard in the best position followed by a delayed grape harvest with respect to doc wine. It needs to have an optimal ripeness with full concentration of sugars in the grape, combined with an optimum polyphenolic and tannic combination. This fine wine is made from a blend of Montepulciano (minimum 85%) and Sangiovese (maximum 15%). It is a well-structured wine to be enjoyed after it has aged for two years in large and small barrels. It pairs well with grilled meats, especially with roast game seasoned with laurel. It also pairs well with cured meats, pecorino cheese and many other aged cheeses.
It is produced in the areas around Ancona, Offagna, Camerano, Sirolo, Numana and parts of Castelfidardo and Osimo.
