The brodetto of San Benedetto del Tronto

 

In a saucepan, fry the onion and some chilli pepper in extra-virgin olive oil, and add cuttlefish and white wine, pieces of green tomatoes, and green and red peppers. Then, add dogfish, monkfish, piper gurnard, ray, redfish and mantis shrimps. Cook them slowly in a saucepan with a lid for few minutes, and before serving it add white wine vinegar and toasted bread.
