Traditional "Brodetto" of Fano

 

Ingredients for 4 people:
2 kg of fish (3-4 kg of whole fish); 250 grams of extra-virgin olive oil; 50 grams of wine vinegar (6 tablespoons); 400 grams of water (2 glasses); 130 grams double concentrated tomato; 30 grams of onion (1/4 of onion); 4 grams of garlic (a clove of garlic); a large quantity of freshly ground pepper; salt.


Method: 
Fry the olive oil, the chopped onion and garlic into a low and broad saucepan. Dilute the tomato paste in the water and add it on the sofrito (or sauce). Add fishes by starting from the big ones, salt, pepper and cook for about 20-25 minutes.
